...What causes it? If any of you could tell me of ways to keep it to a minimum in scenarios, I.E things to avoid, I'm sure most people would appreciate it.

What causes it? In the internet, slow connections and slow computers. In the single player scenarios/campaigns, slow computers. These are the main reasons.
Walls in scenarios tend to make the scn laggy when they are too many. Careful with them. Also, the more detail in maps, the laggier they may be. ROTDF is quite laggy in my PC, for instance, due to my slow PC and the scn high deatil in map design.

Many units and animals can also cause a lot of lag: this includes birds and fish patches.
Another source of lag is the path-finding for the computer. If your game lags, try to make some paths a bit broader for the computer.
A lot of active Ai's with villagers who gather resources and build up economies can also cause a strain on the processor. Some more passive opponents can solve that problem.
Water maps where the computer uses transport ships also have a very high lag risk - it takes a lot of computer memory.
Sometimes a single tree more or less can make a difference between a laggy game and a perfect flow of gameplay.

If u have too much units the computer has to send more data across wich will take a while cuasing the other computer to lag.

Contrary to popular belief, the lag caused by inanimate gaia objects is miniscule compared to the lag caused by Active Units and the AI, this includes trees.
When i was making Legacy of Vengence 3, i found that the screen seemed to lag more when you moved it across the town than a dense forest with flower beds and objects everywhere.
