I start with a Grass 1 map, cover it all with elevation 7, and afterwards add other elevations, terrains, etc.

One of the things that still frustrate me with the AOK editor is not being able to place water too near elevations. I found this out to my dismay when trying to create a river gorge. I had to use sea rocks to make it look like a stream. Even if the tile doesn't act as a water barrier, they could at least have made more mini waterfalls. With the one in the first editor you could just stick it on a hillside.

I always start with a blank map - it lets me get far more inspired, for one, and doesn't constrain me into sort-of following the existing map design.
