For the Cho Ko Nu, it is the fact it fires several projectiles each shot. For the Mangudai, it is their attack bonus.

To add, the secondary arrows of the Chu Ko Nu have not just pierce but also melee attack values. The melee value is 0, but as rams have -3 melee armor, the secondary arrows deal 3 damage each. This in particular is why they turn rams into woodchips in a matter of seconds.

Also, Hand cannons, Jannissaries, conquistadors and slingers all have an attack bonus vs rams. It's not much (ranges from 2-6) but it definitely adds up.

Similarly, organ guns deal 9 damage to rams on account of the 4 secondary bullets doing 2 damage regardless of the unit.
